Can you believe we've already reached the final week and challenge of #StepintoSummer? I have had so much fun sharing the weekly challenges with you all, taking part myself and I feel like it's really aided my weight-loss journey! Challenge Four was all about planning ahead, and for me it worked really well. So well in fact, that I've carried it on this week and all meals for the week ahead have been planned, ready to be devoured! Challenge Five is the final challenge of #StepintoSummer, and it's one that's both fun and really easy, anyone can do it!
Challenge Five is to serve a surprisingly healthy meal (see, I told you it was easy!) and just like with every challenge, I have a delicious recipe to share with you all to make this week's challenge all that much easier! This week's recipe is something I whipped up this lunch-time, and it was not only delicious, but super filling, definitely something I would make again! Will you be giving it a try? Weight Watchers Simple Start Hero Recipe
Pasta with Creamy Asparagus Sauce
Serves 4, 10ppts per serving
400g wholewheat tagliatelle
300g asparagus, woody ends removed and stems roughly chopped
Calorie controlled cooking spray
4 bacon medallions, sliced into thin lardons
200g cherry tomatoes, halved
200g 0% fat Greek yoghurt
2 tbsp chopped fresh chives
2 tbsp chopped fresh basil
Salt and freshly ground black pepper
Bring a large pan of unsalted water to the boil and add the pasta. Cook according to the packet instructions until al dente. Add the asparagus for the last 4 minutes of cooking time. Drain well, reserving around 150ml of the pasta cooking water.
Meanwhile, heat a large non-stick frying pan and spray with the calorie controlled cooking spray. Add the sliced bacon and cook until crisp. Add the tomatoes and cook for a further minute or so, until starting to soften.
Meanwhile, mix together the Quark and Greek Yoghurt with around 100ml of the reserved cooking water. Reduce the heat under the bacon and tomatoes and add the Quark and Yoghurt mixture, plus enough of the remaining reserved cooking water to make a thick, smooth sauce. Heat gently without boiling.
Return the cooked pasta and asparagus to the pan and add the sauce and herbs. Season to taste and serve immediately.

Challenge Five is going to be a great end to a really fantastic campaign, and I am determined to make every meal this week taste delicious, even when it's something healthy! I know a lot of people worry over missing out on their favourite foods and flavours when taking up a lifestyle change such as shedding the pounds - but that's the beauty of Weight Watchers! You can eat whatever you like (in moderation), and still get all the great taste and flavour you would with more naughtier food options! Great tasting food and losing weight? What's better!
